Over the last few days I have prepared this Cyser - a light blend of select cider apples fortified to 14% with honey - for bottling, I am very pleased with the way it has turned out. It tastes everything it is, a glorious fusion of honey and apples, medium bodied and nicely balanced. Due for release 1st December, available in standard 75cl wine bottle and Italian 20cl display bottle.

This rich port type wine has been made from Elderberry, Sloe and Damson, with a handful of Perry Pears to add to the body. Over the last few days I have racked it in preperation for bottling and had to have a taste! It has moved on from last year, the tannins are maturing and although the fruit flavours are stilll there, it is developing a rich depth.
